Protein Cheesecake

A simple and sweet protein cheesecake! Yum!

Ingredients
  • 500 g cottage cheese 1,5%
  • 300 g vanilla quark, unsweetened
  • 2 dl egg white
  • 2 tbsp fibre husk
  • 1 tbsp chia seeds
  • ½ dl chickpea flour
  • 1 tbsp bitter almond flavour
  • MASHED BERRIES
  • ½ tbsp granulated stevia or similar sweetener without energy
  • 1 dl raspberries
  • 1 dl blueberries
  • TOPPING
  • 200 g ProPud Protein Pudding Vanilla
Instructions

Preheat the oven to 175°C. Mash the berries and mix in the granulated stevia. Refrigerate. Put all ingredients into a bowl and mix well using a spoon. Distribute the batter in an ovenproof dish, cover with aluminum foil, and bake in the lower part of the oven for about one hour. Remove the foil and bake for another 20 minutes or so, until the cheesecake is nice and golden brown. Let the cake cool. Top with vanilla pudding and mashed berries.
